A favorite of many, duck breast is a lean, boneless cut of meat from the bird’s chest. In the culinary world, this succulent, juicy and soft piece of meat is also called ‘agret.’ While a majority of its fans like duck breast because of its rich, delicious flavor, there are many who can’t get enough of it because it is full of nutrients and can be eaten along with its mouth-watering crunchy skin, or without.

First think size. When they’re bred properly and fed with the right amount of nutrients, ducks will consistently lay eggs that are nearly a whole ounce heavier than what is considered an extra-large chicken egg.
Beyond their average weight of 3.5 ounces, duck eggs have a yolk that about doubles that of a chicken’s.
A duck egg packs 9.6 grams of fat (compare this with 5 grams from a chicken egg), omega-3 fatty acids of about 71 milligrams, and 9 grams of protein. They also more choline, iron, folate Vitamins A and D.
Duck legs take you a step closer to heaven particularly if you are looking for meat that combines strong flavor, tenderness, moisture and fat. In addition, Pekin legs are generally well sized and packed with nutrients which makes them versatile and suitable for a braise, roast or confit.
Ready to cook? Great. Just remember that duck breast is red meat (not white meat like chicken breast) and that it will appear pink even when fully cooked at the ideal temperature of 75 Deg Centigrade (165 Degrees Fahrenheit).
